Our current obsession is this peppermint patty recipe from Super Healthy Kids. With an even amount of coconut oil and raw honey they won't cause your blood sugar to spike. Minus the chocolate, they are almost identical to the coconut honey chews recommended on the gut healing protocol, the GAPS diet. They are recommended as an easy-to-digest sweet fix that doesn't disturb the healing process of the lining of the intestines. So not only can you enjoy this refreshing seasonal treat, but you can treat your body well at the same time. Have with your first cup of coffee, with your bedtime tea, or as a hold me over snack in between meals.

These little treats are recommended as an easy-to-digest sweet fix that doesn't disturb the healing process of the lining of the intestines.

Ingredients
1/2 cup coconut oil
3 tablespoon honey
3/4 teaspoon peppermint extract
2/3 cup chocolate chips, dark
1/2 tablespoon coconut oil
Directions
Combine coconut oil, honey and peppermint extract. Place in the freezer for 15-20 minutes or until firm enough to scoop out.
Scoop out and form little balls, then press flat into disks about the size of a silver dollar. Place in the freezer again for 15-20 minutes.
Melt dark chocolate chips and coconut oil together. Dip frozen "disks" into the melted chocolate using a fork and place on parchment paper. Place back into freezer to let set. Enjoy!
